Swiss Chard with Bacon and Cheese

1 bunch of Swiss chard
1/2 cup onions (scallions, spring, white, red)
1 clove garlic or 1/4 cup chopped scapes
1/3 cup grated parmesan cheese
3 slices bacon

Wash chard thoroughly. Separate stems from leaves. Chop stems, onion,
scapes into a small dice. Slice leaves into strips. Cook bacon. Remove from
pan. Drain bacon fat leaving about 1 tablesppon in pan.  Saute stems, onions,
and garlic until they start to get soft. Add sliced leaves. Stir over medium heat
until they wilt down. If mix gets dry or starts to stick, add a little water. Add
crumbled bacon and cheese. Cook for 2 or 3 minutes more and enjoy.
